Polenta Chips
Crispy on the outside, fluffy on the inside. These polenta chips are the best side to any main meal, especially when served with a herby garlic dip!
Once upon a time (about 7 years ago actually) I was at a restaurant in London called The Gate where I tried polenta chips for the first time ever and I remember being blown away them.
I was amazed as to how they could be so crispy and textured on the outside, yet so fluffy and soft on the side. Plus, they were served with a herby garlic mayo. I instantly fell in love.
It didn’t take me long after this experience to go on a culinary adventure to recreate my own. I wanted to make ones that could give me the same levels of texture, but that weren’t deep fried in oil.
So these gorgeous chips you see here are my ones. Which are just as crispy and fluffy, but lightly brushed with oil and then baked!
I love making these so much now that I struggle to think of a time where I’d want regular potato chips instead of these.
The recipe is below:
1 cup polenta
2.5 cups water
1/2 tsp salt, or to taste
black pepper
mixed herbs (oregano, thyme, rosemary), to taste
olive oil, for brushing
Directions:
In a medium pot over high heat, add the water and bring to a boil.
Add in the polenta and reduce the heat to low, whisk continuously for about 5 minutes, or until all the liquid has been absorbed and the polenta is creamy.
Add the salt, pepper and mixed herbs, stir until well combined.
Transfer the polenta to the prepared and greased baking sheet and spread out evenly with a spatula. Chill in the fridge for at least 2-4 hours to set.
Carefully flip the baking sheet onto a cutting board to release the polenta. Slice in half lengthwise, and then cut into equal sized pieces.
Preheat the oven to 220C. Brush each chip generously with olive oil before placing them on the baking tray. Bake for 30 minutes, flipping halfway through and brushing the sides with a little more oil, until golden brown.
Serve the fries with a delicious herb garlic mayo dip and enjoy!
