Cauliflower & Broccoli Gnocchi Cheese Bake

For many years, Christmas dinner has been centred around big pieces of meat - which always was a bit off to me, given that Christmas is about celebrating birth and new life.

Vegetables (aside from potatoes) were often an afterthought, and that’s a shame, because some veggie side dishes are honestly so damn good they deserve more light!

Like personally I love a cauliflower cheese, but it just isn’t substantial enough to be a meal on it’s own, which I would happily have throughout the week away from holiday season if I could…

Oh wait, I can!

Hmm, well what can I do to this already amazing side dish, to give it more substance?

It comes down to an extra serving of broccoli for a boost of health, and gnocchi for those cosy carbs. Making it a proper comforting meal that will satisfy you without the need for anything else.

This really is a hug in a bowl type situation.

My recipe is creamy, cheesy, and completely dairy free thanks to the béchamel sauce that uses plant based butter and cheese - because why wouldn’t you want to make a dish that everyone can enjoy?

Whether you choose to eat this as a side thing or a main thing, it’s one that will please the whole family and want them coming back for more!

Ingredients:

  • 1 broccoli head

  • 1 small cauliflower

  • 300g gnocchi

  • panko breadcrumbs
